This is the first of a weekly message to the readers of the Fredericksburg Cooking Academy blog.

The FBG Cooking Academy is a brand new cooking school in the Texas Hill Country. We are offering our second class next week on Wednesday, July 25 on Breakfast: Bed and Breakfast Style. The recipes from the class will be posted on the blog site next week along with pictures of everyone having a great time. We are kicking off this class with a field trip to the Fredericksburg Herb Farm. One of our chefs, Carol Seminara, is a Master Gardener and is going to lead us through the gardens -how fun.

Back at Town Creek B&B we will have cooking demonstrations and of course tastings. The recipes will be printed up in a booklet and hopefully everyone will leave the class with the ability to prepare the recipes and wow their families and friends.

Mary Kaye Sawyer Morse and I are developing the class schedule for the Fall – so if you have any suggestions on classes you would be interested in attending, please let us know. You can post on this blog or call us (1-877-777-6848).  We are choosing our professional chefs right now. Tough job tasting and sampling – but someone has to do it! If you are a chef and have an idea for a class, please contact us.

Mary Kaye and I both have backgrounds in Health and Wellness and are looking forward to offering classes that will present healthy foods that are high in taste and freshness. For instance, Mary Kay will be teaching, “Spa Cuisine at Home” and “Cooking up a Lifestyle for Fighting Fat after 40”.  Also, look for classes aimed at diabetic lifestyle cooking. 

We both own bed and breakfast inns in Fredericksburg TX, have gardens, enjoy entertaining and exploring the local food scene. Stay tuned for some fun classes.

Each week I will be presenting a recipe or meal plan that has caught my eye. This week the recipes are from Better Homes and Gardens, August 2007.  I will definitely be serving the Upside-down Berry Cornmeal Cake at Town Creek Bed & Breakfast.  I love adding the yellow cornmeal to a cake recipe. Cornmeal gives baked goods an interesting flavor and texture.

The Argula Salad with Berry Dressing would be excellent with other kinds of lettuce like bibb or romaine.
